I used California dates @datesaregreat for this delicious and easy dinner recipe! California dates are a healthy sugar substitute and can be used cup for cup. California dates add a natural sweetness with a lower glycemic index than sugar.
INGREDIENTS:
⁃ pork tenderloin
⁃ ⅔ cup california dates, chopped into small pieces
⁃ 3 tbsp Canola oil
⁃ 1 fresh orange
⁃ 3 tbsp fresh cilantro, chopped
DIRECTIONS:
1. Preheat oven to 425°. Heat 1 tbsp oil in a large skillet over medium-high heat. Season pork with salt to taste and cook, turning, until browned on all sides, about 7 minutes.
2. Transfer skillet to oven and cook pork until an thermometer inserted reads 140°, about 15 minutes.
3. Transfer pork to a cutting board and let rest at least 5 minutes before slicing.
4. In a bowl mix together dates, orange juice, cilantro, and 2 tbsp oil. Add salt to taste.
5. Spoon sauce over pork and enjoy your delicious pork!
