INGREDIENTS:
* ¼ cup corn
* ¼ cup black beans, cooked
* ¼ cup cooked chicken, shredded
* 1 tbsp cilantro
* 1 tbsp white onion, chopped
* ½ cup shredded mozzarella cheese
* ½ cup shredded cheddar cheese
* 2 Flour tortillas
* 1 Lime
* Salt (to taste)
DIRECTIONS:
1. In a frying pan, sauté onions until soft. Add corn, black beans, chicken, lime juice, and cilantro. Add salt to taste. Cook for approximately 5 minutes, until corn is soft. Then set aside.
2. Add your chicken mixture to a flour tortilla. Top with cheddar and mozzarella (or your favorite melting cheese). Cover with another tortilla.
3. Add back to frying pan for 3 minutes and then flip. Fry for another 3 minutes, or until cheese is melted. Top with sour cream or guacamole and enjoy!
