Ingredients:
½ cup aji amarillo paste
2 tablespoons olive oil
1 cup evaporated milk
4 soda crackers
1 cup queso fresco
Salt
6 yellow potatoes, boiled and peeled
3 hard-boiled eggs, peeled and cut in slices
Directions:
1. Put the aji amarillo in the blender. Add milk, crackers, oil, queso fresco, and salt. Blend until smooth.
2. Place your potato slices on a plate and cover with a few tablespoons of the aji amarillo sauce.
3. Garnish your potatoes with hard boiled eggs and they are ready to be served! Enjoy!
