Ingredients:
Danish Dough:
• 3 cups of flour
• 1 cup of butter
• 1/4 cup of sugar
• 2 eggs
• 1/2 teaspoons of vanilla
• 2 tablespoons of butter
• 1/4 cup of milk
• 1/2 cup of water
Danish Filling:
• 4 Apples
• 2 tbsp of flour
• 2 tbsp of sugar
• Apricot jam
Directions:
1. Mix the flour, salt and sugar in a mixer. Add butter, 1 egg, milk and continue to mix to create dough.
2. Add 1/4 cup of water and continue mixing. Add another 1/4 cup of water gradually until the dough becomes a stiff ball.
3. Remove the dough from the bowl and knead on a surface to make sure the ingredients are combined. The dough should be malleable but not too soft.
4. Pat the dough flat and wrap in plastic wrap. Refrigerate for 2 hours.
5. Roll out the dough and do a letter fold. Wrap and chill for 2 hours.
6. Do another letter fold and chill again for another 2 hours.
7. Take the dough out and roll it out, dividing it into two. Roll out the two pieces separately to 20 cm by 20 cm square. Wrap and chill for minimum 30 minutes.
8. Cut each square in to 4 and form them into your preferred danish shape. Arrange pastries on a tray. Let proof until risen and ready to bake (around 4 hours).
9. Preheat the oven to 420F and place a rack at the center. Mix a bowl of apple slices with 2 tbsp of sugar and 2 tbsp flour to create danish filling.
10. Once proofed, egg wash and fill the center of the danishes with apple slices mixture.
11. Bake the danishes for 20 minutes and reduce heat to 400F. Bake the danishes for another 15 minutes.
12. Heat the apricot jam and glaze the danishes. Once glazed, they are ready to serve! Enjoy!
